My wife decided to sleep in and my son was starving, so I took a stab at cooking what he wanted. Huevos con something something. Basically peppers, onions, and tomatoes cooked down with spices and eggs steamed on top. It wasn’t like my wife would cook it, but it had good flavor and everyone was happy.

Kinja'd!!!

What’s on your plate today?

I know that dish as Basque baked eggs, but I think every culinary culture around thebworld has a version.

Wife is frying up bacon. Out of eggs. Oh well. I am having some oatmeal with fresh picked strawberries, blackberries, rasberries topped with cappuchino foam! They were fruiting way to early. But very welcome this time of year!

It makes sense. My wife’s family originated from Spain.

bunch of different cultures claim it.  IIRC it originated in north Africa and spread throughout the Levant.

I forgot to set out the almond croissants to proof, so I had to make some last second adjustments.

Potato pancakes. Just the small batch for myself. This used to be one of my favourite meals when I was a kid, but my mom didn’t like making them because of how much shredding potatoes was necessary for a larger family . For only one or two though it’s pretty quick and easy. Shred the potatoes, mix in egg, salt, pepper, dill, and onion (I used powder because I didn’t feel like slicing onions), fry in oil. S erve with sour cream, a pple sauce (I had none because oops ) and maple syrup (I have lots because obviously).

You should look into Shakshuka. I think you'd like it.

food doesn’t have to be pretty, even in the age of Instagram.  otherwise no one would touch Indian food.

I looked it up! The big difference between that and what my wife makes (I guess what I made too) is the spices. Where I used a bit of garlic, cayenne, salt & pepper, and a bit of lemon, they use paprika, cumin, and nutmeg. I’ll have to give that combination a try!
